Instructions
- Preheat the oven to 350°F and prepare an 8x8 baking dish with cooking spray.
- In a medium bowl, whisk together the eggs and milk.
- Stir in the cottage cheese, garlic powder, crushed red pepper, sea salt, and black pepper.
- Add the cooked quinoa and half of the cheddar cheese to the mixture.
- Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese.
- Bake for 30 minutes, and if desired, brown the top under a broiler for 2-3 minutes.
