Quinoa Breakfast Casserole

Ingredients

  • 6 units eggs
  • ½ cup milk
  • ½ cup cottage cheese
  • 1 teaspoon garlic powder
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 cup cooked quinoa
  • 1 cup cheddar cheese (divided)

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 baking dish with cooking spray.
  2. In a medium bowl, whisk together the eggs and milk.
  3. Stir in the cottage cheese, garlic powder, crushed red pepper, sea salt, and black pepper.
  4. Add the cooked quinoa and half of the cheddar cheese to the mixture.
  5. Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese.
  6. Bake for 30 minutes, and if desired, brown the top under a broiler for 2-3 minutes.
