Easy Breakfast Casserole

Ingredients

  • 1 cup packed fresh spinach
  • 1 cup dry quinoa, rinsed and cooked
  • 1 cup chopped cooked breakfast sausage
  • 1 cup cheese, dairy or non-dairy
  • 1 cup full fat coconut milk
  • 1 teaspoon Herbamare
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F and grease a large or two small baking dishes.
  2. Place the hot cooked quinoa in a mixing bowl on top of the fresh spinach to wilt it slightly.
  3. Add the remaining ingredients to the bowl, saving the eggs for last to prevent scrambling.
  4. Mix well to combine all ingredients.
  5. Bake in the oven for 30 minutes.
  6. Allow to cool slightly before serving.
