Easy Breakfast Casserole

Ingredients

  • 1 cup packed fresh spinach
  • 1 cup dry quinoa, rinsed and cooked
  • 1 cup chopped cooked breakfast sausage
  • 1 cup cheese, dairy or non-dairy
  • 1 cup full fat coconut milk
  • 1 teaspoon Herbamare
  • 3 whisked eggs

Instructions

  1. Preheat the oven to 350°F and grease a large or two small baking dishes.
  2. Combine the hot cooked quinoa with the fresh spinach in a mixing bowl to wilt the spinach.
  3. Add the remaining ingredients to the bowl, mixing well but adding the eggs last to prevent scrambling.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 30 minutes, then cool slightly before serving.
