Easy Breakfast Casserole

Instructions
- Preheat the oven to 350°F and grease a large or two small baking dishes.
- Combine the hot cooked quinoa with the fresh spinach in a mixing bowl to wilt the spinach.
- Add the remaining ingredients to the bowl, mixing well but adding the eggs last to prevent scrambling.
- Pour the mixture into the prepared baking dish.
- Bake for 30 minutes, then cool slightly before serving.
