Instructions
- Chop the cauliflower into florets and pulse in a food processor until it resembles rice.
- Preheat the oven to 425°F and spray a large sheet pan with oil.
- Combine the riced cauliflower, olive oil, garlic, and salt on the prepared sheet pan, spreading it out in a single layer.
- Roast in the oven for 25 minutes, mixing halfway through until golden.
- Remove from the oven and top with fresh lemon juice and parsley.
