The Cauliflower Rice

  • 16 oz riced cauliflower

The Seasoning

  • 1 tablespoon olive oil
  • 3 cloves garlic, chopped
  • ½ teaspoon kosher salt
  • 2 teaspoons fresh chopped parsley
  • 1 teaspoon fresh lemon juice

Instructions

  1. Chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Preheat the oven to 425°F and spray a large sheet pan with oil.
  3. Combine the riced cauliflower, olive oil, garlic, and salt on the prepared sheet pan, spreading it out in a single layer.
  4. Roast in the oven for 25 minutes, mixing halfway through until golden.
  5. Remove from the oven and top with fresh lemon juice and parsley.
