Crispy Roasted Cauliflower Rice

Instructions
- Preheat the oven to 400°F and prepare the ingredients.
- On a large baking sheet, combine the frozen cauliflower rice, chopped broccoli, hemp seeds, parsley, nutritional yeast, salt, garlic powder, and pepper.
- Toss the mixture to combine, then add the avocado oil and toss again.
- Spread the mixture in an even layer on the baking sheet and bake for 10 minutes until crispy bits start to form.
- Remove from the oven, scrape up the bits, and mix around.
- Return to the oven and cook for an additional 4-5 minutes, watching carefully to avoid burning.
- Remove from the oven, squeeze lemon juice over the mixture, and mix everything together.
- Serve with your favorite protein and enjoy!
