Ingredients

The base

  • 3 cups frozen cauliflower rice
  • 3 cups broccoli florets, chopped into small bits

The toppings

  • 1 cup hemp seeds
  • ¼ cup fresh parsley, chopped
  • ¼ cup nutritional yeast

The seasonings

  • 1 tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp ground black pepper

The oil

  • 3 tbsp avocado oil

The acid

  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 400°F and prepare the ingredients.
  2. On a large baking sheet, combine the frozen cauliflower rice, chopped broccoli, hemp seeds, parsley, nutritional yeast, salt, garlic powder, and pepper.
  3. Toss the mixture to combine, then add the avocado oil and toss again.
  4. Spread the mixture in an even layer on the baking sheet and bake for 10 minutes until crispy bits start to form.
  5. Remove from the oven, scrape up the bits, and mix around.
  6. Return to the oven and cook for an additional 4-5 minutes, watching carefully to avoid burning.
  7. Remove from the oven, squeeze lemon juice over the mixture, and mix everything together.
  8. Serve with your favorite protein and enjoy!
