Ingredients

The cookie base

  • ½ cup salted butter
  • ½ cup organic cane sugar
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • 1 cup white whole wheat flour
  • cup cocoa powder
  • ½ tsp baking soda
  • ¼ tsp fine sea salt
  • ½ cup semi-sweet chocolate chips

Garnish

  • to taste crushed candy canes

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch cast iron skillet.
  2. In a mixing bowl, cream the butter and both sugars until fluffy, about 2 minutes.
  3. Add the vanilla and mix until combined.
  4. Incorporate the flour, cocoa powder, baking soda, and salt, mixing until a dough forms.
  5. Gently stir in the chocolate chips.
  6. Spread the dough into the prepared skillet and bake for 18-20 minutes, or until the center is set.
  7. Allow to cool on a wire rack for 15 minutes and garnish with crushed candy canes.
