Ingredients

The cookie dough

  • 1 ¼ cups all-purpose flour
  • ¾ tsp baking powder
  • ¼ tsp salt
  • tsp baking soda
  • 8 Tbsp coconut oil or vegan butter, softened
  • cup brown sugar, packed
  • 3 Tbsp non-dairy milk of choice
  • 3 Tbsp tahini
  • 1 Tbsp pure vanilla extract
  • ½ cup dark chocolate chunks

For garnish

  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 350℉ and prepare your skillet or baking pan.
  2. In a bowl, beat the softened coconut oil or vegan butter with brown sugar, non-dairy milk, tahini, and vanilla until smooth.
  3. Add the dry ingredients and mix until a soft dough forms.
  4. Fold in the chocolate chunks and spread the dough into the prepared skillet or pan.
  5. Bake for 24-27 minutes, until the edges are golden and the center is set.
  6. Sprinkle with flaky sea salt after removing from the oven.
  7. Allow to cool before serving or slicing into bars.
