Ingredients

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup packed brown sugar
  • ½ cup melted coconut oil
  • cup tahini
  • 6 tablespoons water
  • 2 teaspoons vanilla extract
  • 1 heaping cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the brown sugar, coconut oil, tahini, water, and vanilla until smooth.
  4. Combine the dry ingredients with the wet ingredients using a spatula.
  5. Fold in the chocolate chips.
  6. Use a 2-tablespoon cookie scoop to place dough balls on the baking sheets, leaving about 2 inches between them.
  7. Bake one sheet at a time for 12 to 14 minutes until lightly brown around the edges.
  8. Let the cookies cool on the baking sheet for at least 10 minutes before transferring them to a wire rack.
