Ingredients

The cookie

  • 2 pcs eggs
  • 1 cup coconut sugar
  • cup nut butter of choice
  • 1 tsp vanilla
  • ¾ cup almond flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup dairy free chocolate chips

Optional topping

  • to taste chocolate frosting

Instructions

  1. Preheat the oven to 350°F and grease a cast iron skillet.
  2. In a medium bowl, whisk together the eggs, coconut sugar, nut butter, and vanilla until well combined.
  3. In a separate small bowl, mix together the almond flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until combined; the batter will be thick.
  5. Fold in the chocolate chips.
  6. Pour the batter into the skillet, spreading it to touch the edges, and top with additional chocolate chips if desired.
  7. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.
