Instructions
- 1. Preheat the oven to 350°F and grease a 9-inch cast iron skillet.
- 2. In a small bowl, whisk together the gluten-free flour, baking soda, and salt.
- 3. In a stand mixer, combine the melted coconut oil, eggs, maple syrup, and vanilla extract until well mixed.
- 4. Gradually add the dry ingredients to the wet mixture in two batches, mixing well after each addition.
- 5. Stir in the chocolate chips.
- 6. Transfer the batter to the prepared skillet and press down to even it out.
- 7. Bake for 20 to 30 minutes, checking for doneness with a toothpick.
