Skillet Chocolate Chip Cookies

Ingredients

  • ¼ cup tahini (or other seed/nut butter)
  • ½ cup vanilla yogurt (dairy or non-dairy)
  • ¼ cup light brown sugar
  • 1 tsp vanilla extract
  • ¼ cup oat flour
  • 2 Tbsp buckwheat flour
  • 2 Tbsp arrowroot flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¼ cup chocolate chips/chunks

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium mixing bowl, combine tahini, yogurt, brown sugar, and vanilla extract.
  3. Add oat flour, buckwheat flour, arrowroot flour, baking soda, and salt, and mix until well combined.
  4. Fold in the chocolate chips and/or chunks.
  5. Pour the batter evenly into two 6.5-inch cast iron skillets.
  6. Bake for 12-14 minutes, or until the edges darken slightly and a toothpick inserted into the center comes out clean.
  7. Serve warm, optionally topped with whipped cream or ice cream.
