Coconut Oatmeal Chocolate Chip Skillet Cookies

Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine oats, flour, coconut flakes, baking soda, baking powder, ground cinnamon, and salt.
- In a stand mixer, cream together the butter and brown sugar until creamy.
- Add the egg and honey to the butter mixture and mix until combined.
- Gradually add the dry mixture to the wet mixture until just combined.
- Fold in the chocolate chips.
- Scoop the batter into one large cast iron skillet or three mini skillets.
- Bake for 15-20 minutes.
- Optional: Serve with vanilla ice cream.
