Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 each egg
  • ¼ cup honey
  • cups regular oats
  • ¾ cup white whole wheat flour
  • ¼ cup unsweetened coconut flakes
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • a pinch salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine oats, flour, coconut flakes, baking soda, baking powder, ground cinnamon, and salt.
  3. In a stand mixer, cream together the butter and brown sugar until creamy.
  4. Add the egg and honey to the butter mixture and mix until combined.
  5. Gradually add the dry mixture to the wet mixture until just combined.
  6. Fold in the chocolate chips.
  7. Scoop the batter into one large cast iron skillet or three mini skillets.
  8. Bake for 15-20 minutes.
  9. Optional: Serve with vanilla ice cream.
