Ingredients

The batter

  • ¾ cup whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 unit egg
  • ¾ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • cup rolled oats

Add-ins

  • ½ cup chocolate chips
  • ½ cup raisins

Instructions

  1. 1. Preheat the oven to 350°F and grease a cast iron skillet.
  2. 2. In a large bowl, mix together the flour, baking soda, and salt.
  3. 3. In a small bowl, whisk together the egg, coconut sugar, coconut oil, and vanilla.
  4. 4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. 5. Fold in the rolled oats.
  6. 6. Stir in the chocolate chips and raisins.
  7. 7. Pour the mixture into the greased skillet and bake for 18-20 minutes until a toothpick comes out clean.
  8. 8. Enjoy warm, optionally with ice cream on top.
