Almond Poppy Seed Chicken Salad Sandwiches

Ingredients

Chicken Salad

  • 1 1/4 lbs boneless skinless chicken breasts, cooked, chilled and diced into small cubes
  • 1 1/3 cups red grapes, halved
  • ¾ cup small diced celery
  • ½ cup sliced almonds, toasted
  • cup chopped green onions (green portion only)

Dressing

  • cup plain fat-free Greek yogurt
  • ¼ cup light mayonnaise
  • 2 Tbsp honey
  • 1 Tbsp red wine vinegar
  • 1 Tbsp poppy seeds
  • 1 tsp dijon mustard
  • ¾ tsp salt, or to taste

Instructions

  1. Mix all dressing ingredients together in a medium bowl until well combined.
  2. Add all chicken salad ingredients to a large mixing bowl or a salad bowl.
  3. Add dressing and toss to evenly coat.
  4. Store in refrigerator and serve within 1 - 2 hours for best results.
