Ingredients

  • 2 cups cooked chicken, cubed
  • ½ cup diced strawberries
  • 2 Tbsp. fine diced red onion
  • ¼ cup fine diced celery
  • ¼ cup sliced almonds, toasted
  • 1–2 Tbsp. chopped fresh basil
  • ¼–⅓ cup mayonnaise
  • 2 Tbsp. lemon juice
  • 1 tsp. poppy seeds
  • to taste salt & pepper
  • as needed leaf lettuce or butter lettuce
  • as needed chopped green onion

Instructions

  1. Combine the chicken, strawberries, onion, celery, toasted almonds, and fresh basil in a medium bowl.
  2. Toast the almonds in a small pan over medium heat until slightly browned, tossing occasionally.
  3. In a small bowl, mix the mayonnaise, lemon juice, and poppy seeds, then gently stir into the chicken mixture.
  4. Season with salt and pepper to taste.
  5. Serve the salad in a lettuce leaf or on a bed of greens, topped with green onions and additional toasted almonds.
