Broccoli Avocado Salad with Wild Rice

Ingredients

Avocado Dressing

  • 1 medium ripe avocado
  • 1 juice orange
  • 1 juice lemon
  • 1 juice lime
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon agave nectar
  • 1 small jalapeño
  • 1 cup lightly packed basil leaves
  • to taste sea salt
  • to taste ground black pepper
  • 3 tablespoon olive oil

Salad

  • 1 bunch broccoli
  • ½ cup sprouted wild rice
  • ½ cup golden raisins
  • ½ cup sunflower seeds
  • to taste salt
  • to taste pepper
  • 6-7 chive blossoms

Instructions

  1. Prepare the dressing by blending avocado, orange juice, lemon juice, lime juice, apple cider vinegar, agave nectar, jalapeño, and seasonings until smooth.
  2. Add basil and olive oil to the blender and blend until creamy.
  3. Chop broccoli into small florets and combine in a large bowl with sprouted rice, raisins, and sunflower seeds.
  4. Pour about ¾ of the dressing over the salad mixture and season with salt and pepper, then toss to combine.
  5. Transfer the salad to a serving bowl and garnish with chive blossoms.
