Ingredients

Wild Rice and Kale Salad

  • 6 cups lacinato kale, finely chopped
  • 1 ⅓ cups cooked brown or wild rice
  • 1 cup avocado, diced
  • 1 cup apple, diced
  • ½ cup crumbled goat cheese
  • 6 Tbsp toasted slivered almonds
  • ¼ cup Craisins
  • 16 oz grilled chicken, chopped small

Lemon Balsamic Cilantro Dressing

  • 1 cup cilantro
  • ½ cup low fat cottage cheese
  • ¼ cup balsamic vinegar
  • 1 Tbsp Dijon mustard
  • ½ Tbsp olive oil
  • 1 Tbsp water (or lemon juice if not using lemon balsamic)
  • ¼ tsp ground cumin
  • ¼ tsp salt

Instructions

  1. Remove tough stems from kale and chop finely. Prep the rest of the ingredients using precooked rice and leftover chicken if desired. Dice apples and avocado. Blend dressing ingredients until smooth. Combine salad ingredients in a bowl and toss with dressing. Serve immediately.
