Kale and Wild Rice Salad

Ingredients

Dressing

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons rice wine vinegar
  • 1 teaspoon minced garlic
  • 1 tablespoon maple syrup
  • 1 teaspoon dijon mustard
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Salad

  • 3 cups cooked wild rice
  • 5 ounces kale
  • 2 pieces mandarin oranges
  • ¼ cup toasted walnuts

Instructions

  1. Combine the dressing ingredients in a blender and process until smooth.
  2. Massage the kale with a tablespoon of the dressing for 2 minutes.
  3. In a large bowl, mix the cooled wild rice and massaged kale.
  4. Top the mixture with the remaining dressing and allow to marinate for 15 minutes.
  5. Add the oranges and walnuts, then serve.
