Easy Kale Salad

wild blueberries, defrosted

mandarin oranges or clementine sections

Instructions
- Combine all dressing ingredients in a small jar and shake well.
- Wash the kale, remove the thick stems, and chop into bite-sized pieces.
- Place the chopped kale in a large bowl and pour half of the dressing over it, tossing to coat evenly.
- Taste the kale and add more dressing if desired.
- Top the dressed kale with blueberries, walnuts, golden raisins, and mandarin oranges.
- Garnish with grated Parmesan if desired and serve.
