Kale Apple and Walnut Salad

Ingredients

The salad

  • 4 cups Kale, shredded
  • ½ cup Apple, chopped
  • cup Walnuts, chopped

The dressing

  • ¼ cup Lemon Juice
  • ¼ cup Olive oil
  • 2 tsp Honey or maple syrup
  • a pinch Salt

Instructions

  1. Remove the stems from the kale and finely shred it, massaging it for about 30 seconds to soften.
  2. Chop the apple, preferably using a Pink Lady or Honey Crisp variety.
  3. Toast the walnuts in a dry skillet until fragrant, being careful not to burn them.
  4. Combine all salad ingredients in a bowl.
  5. In a mason jar, mix the olive oil, lemon juice, honey (or maple syrup), and salt, then shake until well incorporated.
  6. Toss the dressing with the salad and serve.
