Kale Apple and Walnut Salad

Instructions
- Remove the stems from the kale and finely shred it, massaging it for about 30 seconds to soften.
- Chop the apple, preferably using a Pink Lady or Honey Crisp variety.
- Toast the walnuts in a dry skillet until fragrant, being careful not to burn them.
- Combine all salad ingredients in a bowl.
- In a mason jar, mix the olive oil, lemon juice, honey (or maple syrup), and salt, then shake until well incorporated.
- Toss the dressing with the salad and serve.
