Kale Apple and Quinoa Salad

The salad

The dressing

olive oil

fresh lemon juice

honey

Instructions
- Cook the quinoa according to package directions and let it cool completely.
- Whisk together the dressing ingredients in a jar or bowl.
- Add kale to a salad bowl, pour ¾ of the dressing over it, and toss to coat. Chill for 15 minutes.
- Add the apples, quinoa, walnuts, and cranberries to the salad.
- Pour the remaining dressing over the salad, toss gently, and add goat cheese before serving.
