Instructions
- Cook the quinoa by combining it with water in a saucepan, bringing it to a boil, then simmering until tender.
- While the quinoa cooks, prepare the kale by removing the stems and chopping the leaves.
- Make the dressing by mixing olive oil, apple cider vinegar, honey (or maple syrup), mustard, salt, and pepper in a bowl.
- Once the quinoa has cooled slightly, combine it with the dressing, red onion, bell pepper, and carrot.
- Add the chopped kale to the mixture and toss everything well to coat with the dressing.
- Serve immediately or let it marinate in the fridge before serving.
