Ingredients

The salad

  • ½ cup dry quinoa
  • 1 cup water
  • 8 ounces Lacinato kale
  • 1 large carrot
  • ½ red onion chopped
  • 1 red bell pepper chopped

The dressing

  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon spicy brown mustard
  • fine sea salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Cook the quinoa by combining it with water in a saucepan, bringing it to a boil, then simmering until tender.
  2. While the quinoa cooks, prepare the kale by removing the stems and chopping the leaves.
  3. Make the dressing by mixing olive oil, apple cider vinegar, honey (or maple syrup), mustard, salt, and pepper in a bowl.
  4. Once the quinoa has cooled slightly, combine it with the dressing, red onion, bell pepper, and carrot.
  5. Add the chopped kale to the mixture and toss everything well to coat with the dressing.
  6. Serve immediately or let it marinate in the fridge before serving.
