Kale Quinoa Salad

The salad

The dressing

Instructions
- Combine olive oil, lemon juice, salt, and pepper in a small bowl or spouted cup to make the dressing.
- Place kale in a large bowl and drizzle with the dressing, massaging it into the kale for 1-2 minutes to tenderize.
- Add cooked quinoa, mango, strawberries, and pepitas to the kale and gently toss together.
- Transfer the salad to a serving dish and enjoy.
