Mango Quinoa Salad

Ingredients

The salad

  • 1 cup uncooked black quinoa or regular quinoa
  • 2 cups water
  • 1 pinch salt
  • 1 large mango, diced
  • 2 large tomatoes, diced
  • 3 medium green onions, sliced
  • ½ cup chopped cilantro
  • 2 medium avocados, diced

The dressing

  • ¼ cup fresh lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • to taste salt and pepper

Instructions

  1. Rinse the quinoa under cold water using a strainer.
  2. In a medium saucepan, combine quinoa, water, and salt; bring to a boil.
  3. Boil for 5 minutes, then reduce heat to low and simmer for about 15 minutes until water is absorbed.
  4. Remove from heat and fluff with a fork; let cool to room temperature.
  5. In a large bowl, combine the cooled quinoa, mango, tomatoes, green onions, cilantro, and avocados.
  6. In a small bowl, whisk together lime juice, olive oil, and cumin.
  7. Pour the dressing over the salad and stir gently to combine; season with salt and pepper.
  8. Serve at room temperature or chilled.
