Mango Quinoa Salad

The salad

uncooked black quinoa or regular quinoa

The dressing

Instructions
- Rinse the quinoa under cold water using a strainer.
- In a medium saucepan, combine quinoa, water, and salt; bring to a boil.
- Boil for 5 minutes, then reduce heat to low and simmer for about 15 minutes until water is absorbed.
- Remove from heat and fluff with a fork; let cool to room temperature.
- In a large bowl, combine the cooled quinoa, mango, tomatoes, green onions, cilantro, and avocados.
- In a small bowl, whisk together lime juice, olive oil, and cumin.
- Pour the dressing over the salad and stir gently to combine; season with salt and pepper.
- Serve at room temperature or chilled.
