The dressing

Instructions
- Rinse the quinoa under cold water and transfer it to a saucepan with water.
- Bring to a boil, then reduce heat and simmer until water is absorbed.
- Remove from heat, cover, and let it rest for 5 minutes before fluffing with a fork.
- In a large bowl, arrange the mixed greens.
- Add the cucumber, mango, tomatoes, pomegranate, and onions to the bowl.
- Once the quinoa is ready, add it to the salad.
- Drizzle with olive oil and season with salt and pepper to taste.
