Mango Salad

Ingredients

The salad

  • ¼ cup Uncooked quinoa
  • 6 oz Mixed greens
  • 1 cup Cucumber (cut in cubes)
  • 2 medium Mangos (cut in cubes)
  • 1 cup Cherry tomatoes (cut into halves or quarters)
  • ½ cup Pomegranate arils
  • 1 small Onion (sliced into half moons)

The dressing

  • 3 tbsp Extra virgin olive oil
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)

Instructions

  1. Rinse the quinoa under cold water and transfer it to a saucepan with water.
  2. Bring to a boil, then reduce heat and simmer until water is absorbed.
  3. Remove from heat, cover, and let it rest for 5 minutes before fluffing with a fork.
  4. In a large bowl, arrange the mixed greens.
  5. Add the cucumber, mango, tomatoes, pomegranate, and onions to the bowl.
  6. Once the quinoa is ready, add it to the salad.
  7. Drizzle with olive oil and season with salt and pepper to taste.
