Avocado Mango Quinoa Salad

The salad

The dressing

chopped red onion

white wine vinegar or champagne vinegar

sea salt

basil, chopped

extra virgin olive oil
Instructions
- Cook the quinoa according to package instructions.
- In a small saucepan, bring the vinegar to a simmer, then add the red onion and salt.
- Remove from heat and allow to cool completely, then drain the onions, reserving the liquid.
- Whisk together the reserved liquid with olive oil and basil.
- In a large bowl, combine the reserved onions, spinach, quinoa, roasted red pepper, mango, pineapple, and avocado.
- Toss everything with the dressing and serve immediately.
