Avocado Quinoa Salad

Instructions
- 1. Boil ½ cup of water in a small pot and add the quinoa and salt. Simmer until the liquid is absorbed and quinoa is soft.
- 2. Prepare the remaining salad ingredients by chopping the vegetables and seasoning the beans with taco seasoning.
- 3. To prevent the avocado from browning, sprinkle it with a mixture of lemon juice and water.
- 4. In two pint-sized mason jars, place 2 tablespoons of dressing at the bottom.
- 5. Layer the ingredients in the jars: red pepper, corn, black beans, quinoa, scallions, and avocado on top.
- 6. Shake the jar or stir the ingredients to distribute the dressing evenly before serving.
