Ingredients

  • ¼ cup quinoa uncooked
  • tsp salt
  • 1 medium red pepper chopped
  • ¾ cup corn
  • 1 cup cooked black beans
  • ½ tsp taco seasoning
  • 1 medium scallion diced
  • 1 medium avocado chopped
  • ¼ cup citrus vinaigrette

Instructions

  1. 1. Boil ½ cup of water in a small pot and add the quinoa and salt. Simmer until the liquid is absorbed and quinoa is soft.
  2. 2. Prepare the remaining salad ingredients by chopping the vegetables and seasoning the beans with taco seasoning.
  3. 3. To prevent the avocado from browning, sprinkle it with a mixture of lemon juice and water.
  4. 4. In two pint-sized mason jars, place 2 tablespoons of dressing at the bottom.
  5. 5. Layer the ingredients in the jars: red pepper, corn, black beans, quinoa, scallions, and avocado on top.
  6. 6. Shake the jar or stir the ingredients to distribute the dressing evenly before serving.
