Instructions
- If using chia seeds, combine them with water and let sit to form a gel.
- Peel the oranges and cut them into segments over a bowl to catch the juices.
- Squeeze the remaining membranes to extract more juice and strain it into another bowl.
- In the bowl with the orange juice, add chia gel or oil, lime juice, miso or salt, and plum vinegar, then whisk together.
- In a large bowl, combine quinoa, mangos, cilantro, red onion, and jalapenos.
- Toss the salad with the dressing and top with cashews before serving.
