Ingredients

Dressing

  • 1 teaspoon chia seeds
  • 2 tablespoons olive oil
  • ¼ cup lime juice
  • 2 teaspoons white miso
  • 1 teaspoon umi plum vinegar

Salad

  • 3 cups cooked quinoa
  • 2 pieces mangos
  • 1 cup cilantro
  • 1 piece red onion
  • 2 pieces jalapenos
  • ½ cup cashews

Oranges

  • 2 pieces oranges

Instructions

  1. If using chia seeds, combine them with water and let sit to form a gel.
  2. Peel the oranges and cut them into segments over a bowl to catch the juices.
  3. Squeeze the remaining membranes to extract more juice and strain it into another bowl.
  4. In the bowl with the orange juice, add chia gel or oil, lime juice, miso or salt, and plum vinegar, then whisk together.
  5. In a large bowl, combine quinoa, mangos, cilantro, red onion, and jalapenos.
  6. Toss the salad with the dressing and top with cashews before serving.
