Quinoa Salad with Spinach Grapefruit & Avocado

Instructions
- Rinse quinoa under cold water and cook according to package directions.
- Drain quinoa and let it cool.
- Peel grapefruit, separate the pieces, and reserve three slices for the vinaigrette.
- Cut the remaining grapefruit into small pieces for the salad.
- In a medium bowl, whisk olive oil, grapefruit juice from reserved slices, vinegar, shallots, salt, and pepper.
- In a large bowl, toss spinach, quinoa, avocado, grapefruit pieces, and vinaigrette.
- Divide the salad between four plates.
