Ingredients

The salad

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 2 medium apples, diced
  • ½ cup pecans, toasted and roughly chopped
  • ½ cup dried cranberries
  • 2 cups baby spinach, roughly chopped
  • 6 ounces goat cheese, crumbled

The dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1-2 tablespoons maple syrup
  • 1 teaspoon dijon mustard
  • ¼ teaspoon ground cinnamon
  • to taste salt

Instructions

  1. Cook quinoa in boiling vegetable broth for 15-20 minutes until absorbed.
  2. Chop the apples, pecans, and spinach while quinoa is cooking.
  3. Make the dressing by whisking together olive oil, apple cider vinegar, maple syrup, dijon mustard, and cinnamon.
  4. Combine cooked quinoa with chopped apples, pecans, cranberries, spinach, and goat cheese.
  5. Pour the dressing over the salad and mix well before serving.
