Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 1 unit shallot, minced
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Salad

  • 3 cups mixed greens (lettuce, spinach, or arugula)
  • 1 cup cooked quinoa
  • ½ cup dried cranberries
  • 1 unit Granny Smith apple, cored and sliced thin
  • ¼ cup crumbled blue cheese (optional)
  • ¼ cup pecans, chopped

Instructions

  1. Cook the quinoa according to package instructions.
  2. Prepare the dressing by blending shallot, vinegar, lemon juice, maple syrup, Dijon mustard, salt, and pepper until smooth. Then add the olive oil and blend until emulsified.
  3. In a large bowl, combine the mixed greens, cooked quinoa, dried cranberries, sliced apple, blue cheese (if using), and chopped pecans.
  4. Toss the salad with the dressing until evenly coated and serve immediately or store in the fridge for later.
