Chopped Apple Quinoa Salad

Ingredients

  • 2 units apple, grated or chopped
  • 2–3 large carrot, grated or chopped
  • 2 cups cooked quinoa
  • ½ cup chopped almonds or walnuts
  • ¼ cup minced fresh parsley
  • cup apple chutney
  • to taste salt
  • as needed mixed salad greens (optional)

Instructions

  1. Prep the ingredients and chill them in the fridge.
  2. Combine all the ingredients in a mixing bowl and toss until well combined.
  3. Serve immediately, either plain, with chips, or on fresh greens.
