Ingredients

The base

  • 1 cup uncooked quinoa
  • cups apple juice
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1/16 tsp ground cloves

The toppings

  • 1 medium apple
  • ½ cup walnuts

Instructions

  1. Rinse the quinoa thoroughly in a wire sieve or bowl to remove its natural coating.
  2. In a medium pot, combine the rinsed quinoa, apple juice, salt, cinnamon, and ground cloves.
  3. Bring the mixture to a boil over high heat, then reduce to low and simmer for 15 minutes.
  4. Turn off the heat and let it rest for 10 minutes without removing the lid.
  5. Chop the apple into small pieces and roughly chop the walnuts while the quinoa rests.
  6. Fluff the quinoa with a fork, then stir in the chopped apples and walnuts.
