Ingredients

The base

  • cup flaxseed meal
  • 1 cup almond pulp
  • 3 cups cooked quinoa
  • 1 cup unsweetened applesauce
  • ¾ cups egg whites

The mix-ins

  • 1 apple, diced
  • ½ cup raisins
  • ½ cup pecans, chopped
  • ½ cup unsweetened shredded coconut
  • ½ tsp salt
  • 2 tbsp ground cinnamon
  • ¼ tsp nutmeg, grated
  • ¼ tsp ground clove

Instructions

  1. Preheat the oven to 375°F and prepare an 8 x 12 baking dish.
  2. In a large bowl, mix flaxseed meal, almond pulp, cooked quinoa, applesauce, and egg whites until combined.
  3. In another bowl, combine diced apple, raisins, chopped pecans, ¼ cup shredded coconut, and spices, then fold this mixture into the quinoa mixture.
  4. Pour the combined mixture into the prepared baking dish and press down evenly.
  5. Sprinkle the remaining ¼ cup of shredded coconut on top and bake for 45 minutes.
  6. Allow to cool for 1-2 hours, then refrigerate for at least 6 hours before cutting into squares.
