Baked Apple Cinnamon Quinoa Squares

Instructions
- Preheat the oven to 375°F and prepare an 8 x 12 baking dish.
- In a large bowl, mix flaxseed meal, almond pulp, cooked quinoa, applesauce, and egg whites until combined.
- In another bowl, combine diced apple, raisins, chopped pecans, ¼ cup shredded coconut, and spices, then fold this mixture into the quinoa mixture.
- Pour the combined mixture into the prepared baking dish and press down evenly.
- Sprinkle the remaining ¼ cup of shredded coconut on top and bake for 45 minutes.
- Allow to cool for 1-2 hours, then refrigerate for at least 6 hours before cutting into squares.
