Quinoa Baked Apples

Instructions
- Preheat the oven to 325 degrees.
- Core the apples, leaving ½ inch at the bottom.
- In a bowl, mix quinoa, rolled oats, walnuts, palm sugar, quinoa flour, and cinnamon.
- Stuff the apples with the quinoa mixture and place them in a casserole dish.
- Dot the apples with Earth Balance or butter and pour apple juice into the bottom of the dish.
- Bake for 45 minutes to 1 hour.
- Allow to cool slightly before serving, and top with ice cream or yogurt if desired.
