Ingredients

The apples

  • 6 units baking apples (like Golden Delicious or Granny Smith)

The filling

  • ¼ cup cooked quinoa
  • 2 tablespoons rolled oats
  • ¼ cup chopped walnuts
  • ¼ cup coconut palm sugar
  • 1 tablespoon toasted quinoa flour
  • ½ teaspoon cinnamon

The topping

  • 2 tablespoons Earth Balance or Butter

The liquid

  • 1 cup apple juice

Instructions

  1. Preheat the oven to 325 degrees.
  2. Core the apples, leaving ½ inch at the bottom.
  3. In a bowl, mix quinoa, rolled oats, walnuts, palm sugar, quinoa flour, and cinnamon.
  4. Stuff the apples with the quinoa mixture and place them in a casserole dish.
  5. Dot the apples with Earth Balance or butter and pour apple juice into the bottom of the dish.
  6. Bake for 45 minutes to 1 hour.
  7. Allow to cool slightly before serving, and top with ice cream or yogurt if desired.
