Ingredients

The apples

  • 4 medium apples
  • to taste none cinnamon for dusting

The crumb topping

  • 1 cup old-fashioned rolled oats
  • ½ cup gluten-free flour blend or all-purpose flour
  • ¼ cup chopped pecans
  • 3 tablespoons pure maple syrup
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • pinch none sea salt

Optional toppings

  • to taste none vanilla ice cream or non-dairy frozen dessert
  • to taste none plain or vanilla yogurt
  • to taste none whipped topping
  • to taste none toasted, chopped pecans
  • to taste none drizzle of maple syrup

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the apples in half and scoop out the core, placing them cut-side up in a 9 x 13 inch baking dish.
  3. Dust the apples with cinnamon and set aside.
  4. In a medium bowl, combine oats, flour, pecans, maple syrup, melted butter, vanilla, cinnamon, nutmeg, and salt, and stir well.
  5. Divide the oat topping evenly over the apples.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Uncover and bake for an additional 20-25 minutes until the apples are tender and the topping is golden brown.
  8. Serve with optional toppings like ice cream, yogurt, or whipped topping, and garnish with pecans, cinnamon, and maple syrup.
