Ingredients

The apples

  • 5-6 apples Gala or Honeycrisp and Granny Smith

The filling

  • ½ cup old fashioned oats
  • ½ cup all purpose gluten free flour or einkorn/whole wheat flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons coconut sugar
  • a pinch sea salt
  • ¼ cup chopped pecans (optional)
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the apples by slicing off the tops and scooping out the core and seeds without cutting through the bottom.
  3. In a bowl, mix the oats, flour, spices, coconut sugar, and salt. If using, add the pecans.
  4. Stir in the melted coconut oil until the mixture has a crumble texture.
  5. Pack the filling tightly into the center of the apples, leaving some on top.
  6. Bake the apples for 35 minutes, checking for softness. Bake an additional 5 minutes if needed.
  7. Carefully remove from the oven and serve warm, topped with ice cream and caramel sauce if desired.
