Ingredients

The apples

  • 4 large baking apples

The filling

  • ¼ cup whole raw pecans
  • ¼ cup whole raw almonds
  • ¼ cup unsweetened shredded coconut
  • ¼ cup maple sugar or coconut sugar
  • ½ teaspoon Diamond Crystal kosher salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom or ground nutmeg
  • 3 tablespoons melted ghee or coconut oil

For baking

  • ½ cup orange juice
  • optional dairy-free vanilla ice cream or whipped coconut cream

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the apples by trimming the bottom if needed, coring them, and peeling the top edge.
  3. Chop the pecans and almonds, then mix with shredded coconut, maple sugar, salt, cinnamon, and cardamom.
  4. Add melted ghee or coconut oil to the filling mixture and combine well.
  5. Stuff the apples with the filling and place them in a baking dish.
  6. Pour orange juice into the bottom of the dish.
  7. Bake the apples for 40 to 50 minutes until tender and golden brown.
  8. Serve warm, topped with orange juice from the baking dish and optional ice cream or whipped cream.
