Instructions
- Preheat the oven to 375°F and rinse the apples.
- In a bowl, mix together the brown sugar, pecans, cinnamon, and nutmeg.
- Core the apples, creating a 1-inch wide space without cutting through the bottom.
- Place the apples in a baking dish and fill them with the sugar mixture, pressing it in.
- Add a few drops of vanilla extract and top each apple with ½ Tbsp of butter.
- Pour the apple juice into the bottom of the baking dish around the apples.
- Bake uncovered for 35 to 45 minutes until the apples are tender.
- Serve warm, optionally with ice cream.
