Ingredients

The apples

  • 6 large honeycrisp apples

The mixture

  • ½ cup coconut sugar
  • 1 teaspoon ground cinnamon

  • 2 tablespoons tapioca starch
  • ¼ cup orange juice
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 400°F.
  2. Thinly slice the apples into pieces about 1/8-inch thick, peeling if desired.
  3. In a baking dish or dutch oven, toss the sliced apples with coconut sugar, cinnamon, ginger, tapioca starch, orange juice, and salt until evenly coated.
  4. Cover the dish with a lid or aluminum foil and bake for 45 minutes.
  5. Remove the cover, stir the apples, and return to the oven for an additional 10 to 15 minutes to thicken the sauce.
  6. Let the apples cool for 10 minutes before serving warm with toppings like whipped cream or vanilla ice cream.
