Ingredients

The filling

  • 4 apples apples, cored and halved
  • ¼ cup firm coconut oil
  • ¼ cup melted coconut oil, for drizzling
  • vanilla ice cream for serving

The topping

  • ½ cup whole rolled oats
  • 2 tablespoons whole rolled oats
  • ½ cup almond flour
  • cup brown sugar
  • ¼ cup crushed walnuts
  • ½ teaspoon Apple Pie Spice or cinnamon
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the oven to 375°F.
  2. Make the topping by combining oats, almond flour, brown sugar, walnuts, apple pie spice, and salt in a bowl, then mix in the firm coconut oil until crumbly.
  3. Scoop out a bit of the center from each apple half and place them in a baking dish.
  4. Drizzle the apples with melted coconut oil and rub it all over the apples.
  5. Cover the dish with foil and bake for 10 minutes.
  6. Uncover the apples, top each half with the topping, drizzle with more melted coconut oil, and bake for an additional 20 minutes until tender and crisp.
