Spiced Apple Oatmeal with Quinoa and Almonds

Ingredients

The base

  • 1 ½ cup water
  • 1 cup soymilk, plain, unsweetened
  • 1 cup old fashioned oats, uncooked
  • 1 cup quinoa, uncooked

The flavorings

  • ¼ cup almond butter
  • 1 tablespoon pure maple syrup (optional)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon cardamom

The toppings

  • 1 large apple with peel, cored, chopped
  • 2 tablespoons chopped almonds

Instructions

  1. Boil water and soymilk in a medium pot.
  2. Stir in almond butter until smooth.
  3. Add oats and quinoa, mix well, and cook uncovered for 5 minutes, stirring occasionally.
  4. Stir in maple syrup, cinnamon, ginger, cardamom, and apple, and cook for an additional 10 minutes until tender.
  5. Top with almonds and serve immediately.
