Instructions
- 1. In a medium saucepan, combine water and almond milk and bring to a simmer.
- 2. In a medium skillet over medium heat, add oil and then the oats, cooking for about 2 minutes until toasted.
- 3. Stir the toasted oats into the simmering liquid and reduce heat, simmering for 25 to 30 minutes until thick and creamy.
- 4. Remove from heat and stir in maple syrup, salt, vanilla, and ground ginger; let stand for 5 minutes.
- 5. In the same skillet, add oil and then the apples, brown sugar, and cinnamon, cooking for about 15 minutes until tender and caramelized.
- 6. Serve oatmeal in bowls topped with the caramelized apples and additional milk or maple syrup if desired.
