Ingredients

The oatmeal

  • 3 cups water
  • 1 cup almond milk
  • 1 tablespoon olive oil or coconut oil
  • 1 cup steel-cut oats
  • ¼ cup maple syrup
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground ginger

The apples

  • 1 ½ tablespoons olive oil or coconut oil
  • 2 medium-large apples, peeled, cored, and chopped
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. 1. In a medium saucepan, combine water and almond milk and bring to a simmer.
  2. 2. In a medium skillet over medium heat, add oil and then the oats, cooking for about 2 minutes until toasted.
  3. 3. Stir the toasted oats into the simmering liquid and reduce heat, simmering for 25 to 30 minutes until thick and creamy.
  4. 4. Remove from heat and stir in maple syrup, salt, vanilla, and ground ginger; let stand for 5 minutes.
  5. 5. In the same skillet, add oil and then the apples, brown sugar, and cinnamon, cooking for about 15 minutes until tender and caramelized.
  6. 6. Serve oatmeal in bowls topped with the caramelized apples and additional milk or maple syrup if desired.
