Ingredients

The oatmeal

  • 2 tablespoons butter
  • 3 cups chopped sweet apples
  • ¼ cup real maple syrup or honey, or brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup apple juice or water
  • 2 ¾ cups water
  • 2 cups rolled oats

Suggested toppings

  • ½ cup chopped sweet apples
  • to taste raw or toasted pecans, chopped
  • to taste raw or toasted walnuts, chopped
  • to taste honey or maple syrup drizzle
  • 1 cup milk of choice
  • to taste cinnamon and/or brown sugar

Instructions

  1. 1. Heat a medium saucepan over medium-high heat and melt the butter.
  2. 2. Add 2 ½ cups of chopped apples and cook for 2-3 minutes until softened.
  3. 3. Stir in maple syrup, cinnamon, and salt.
  4. 4. Pour in ½ cup apple juice and 2 ¾ cups water, and bring to a low boil.
  5. 5. Once boiling, add 2 cups rolled oats and reduce heat to medium.
  6. 6. Cook for 3-5 minutes, stirring occasionally, until most liquid is absorbed.
  7. 7. Serve oatmeal in bowls topped with reserved chopped apples, a drizzle of honey or maple syrup, milk, and a dusting of cinnamon or brown sugar.
