Ingredients

The oats

  • 1 cup steel-cut oats
  • ½ teaspoon cardamom
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • 1 tablespoon toasted sesame seeds (optional)
  • 1 tablespoon whole flax seeds (optional)
  • ¼–½ cup pumpkin seeds (or pecans or walnuts)

The apples

  • 2–3 apples cut into ½-inch thick wedges (honey crisp, gala, pink lady)

The flavorings

  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla
  • 3 tablespoons real maple syrup, plus more for serving
  • cups boiling water

Instructions

  1. Preheat the oven to 375°F and boil 3½ cups of water.
  2. Toast the steel-cut oats in a skillet over medium heat for 5 minutes, stirring constantly, then add the spices and toast for an additional minute.
  3. Transfer the mixture to a casserole dish or keep it in the skillet and stir in the sesame seeds, flax seeds, pumpkin seeds, salt, and vanilla.
  4. Add the apple wedges and pour the boiling water over the top, then stir in the maple syrup.
  5. Bake uncovered for 40 minutes, brushing the apples with more maple syrup or butter halfway through, and broil for 1 minute until golden.
  6. Serve warm, optionally with more maple syrup or butter.
