Ingredients

The base

  • ¾ cup steel cut oatmeal
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

The mix-ins

  • ½ cup almonds (sliced, untoasted) or walnuts (toasted and chopped)
  • teaspoons ground cinnamon
  • ½ teaspoon fine sea salt
  • ¾ to 1½ cups blueberries (optional)
  • 1 peeled, sliced apple (optional)

The sweetener

  • ¼ to ⅓ cup maple syrup

The leavening agent

  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 375ºF.
  2. In a baking pan, mix together the oats, nuts, baking powder, cinnamon, and salt. Place the sliced apples or berries on top.
  3. In a separate bowl, whisk together the milk, maple syrup, egg, melted butter, and vanilla.
  4. Pour the milk mixture over the oat mixture and shake the pan to distribute.
  5. Bake for 55 to 60 minutes, checking after 30 minutes to prevent over-browning.
  6. Allow to cool for a few minutes before serving.
