Ingredients

Main Ingredients

  • 1 tablespoon butter (optional)
  • 1 cup steel-cut oats
  • 3 medium-to-large apples (cored and sliced)
  • 4 cups water
  • a pinch of salt

Optional Ingredients

  • to taste maple syrup or honey
  • to taste nut butter (pecan, almond, or peanut)
  • to taste toasted pecans or pepitas
  • to taste chopped fresh apples
  • to taste dried cranberries
  • to taste additional maple syrup or honey
  • a light sprinkle of ground cinnamon

Instructions

  1. Melt the butter in a medium Dutch oven or large saucepan over medium heat, or warm the pan if omitting butter.
  2. Add the steel-cut oats and cook for about 2 minutes, stirring often, until fragrant.
  3. Stir in the apple chunks, water, and salt, then bring the mixture to a simmer over high heat.
  4. Once simmering, reduce the heat to medium-low and cook for about 35 minutes, stirring every five minutes.
  5. After cooking, remove from heat and let the oatmeal rest for 5 minutes to thicken.
  6. Taste and add maple syrup or honey if desired.
  7. Serve in bowls with your choice of toppings.
