Apple Cinnamon Multigrain Oatmeal

Ingredients

  • 2-1/4 cups old-fashioned rolled oats
  • 1/2 cup kasha
  • 1/3 cup flax seeds
  • 1/3 cup oat groats
  • 1/3 cup raw sunflower seeds
  • 2 pieces baking apples
  • 8 cups water
  • 3/4 tsp salt
  • 1/3 cup raisins
  • 1 tbsp pure vanilla extract
  • 1 tbsp ground cinnamon

Instructions

  1. Bring salted water to a boil in a large pot.
  2. While the water heats, peel, core, and dice the apples.
  3. Once boiling, add oats, kasha, flax seeds, oat groats, sunflower seeds, and apples to the pot and stir.
  4. Reduce heat to a slow simmer and cover the pot.
  5. Simmer for 30-35 minutes, stirring occasionally until grains are tender and liquid is mostly evaporated.
  6. Stir in raisins, vanilla extract, and ground cinnamon, then cover and let sit for 5 minutes.
  7. Serve hot with desired toppings and store leftovers in the fridge.
