Quinoa Apple Waldorf Salad

Ingredients

Waldorf Salad

  • 1 cup quinoa, uncooked
  • 2 cups water
  • 4 stalks celery, diced
  • 2 large red-skinned crisp apples
  • ½ cup fresh Italian parsley, coarsely chopped
  • ½ cup walnuts, coarsely chopped
  • cup raisins

Waldorf Salad Dressing

  • 2 tablespoons walnut oil
  • 1 large lemon, juiced
  • 1 teaspoon brown sugar
  • ¼ teaspoon celery salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon cinnamon
  • teaspoon cardamom
  • ¼ teaspoon allspice
  • ¼ teaspoon kosher salt (optional)

Instructions

  1. Cook quinoa in water over medium heat for about 15 minutes until tender, then drain and fluff.
  2. While the quinoa is cooking, prepare the other ingredients by dicing celery, apples, and chopping parsley and walnuts.
  3. In a small bowl, whisk together the dressing ingredients: walnut oil, lemon juice, brown sugar, celery salt, white pepper, cinnamon, cardamom, allspice, and optional salt.
  4. Combine the cooled quinoa with the celery, apples, parsley, walnuts, and raisins in a large mixing bowl.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately or chill until ready to serve.
