Instructions
- Cook quinoa in water over medium heat for about 15 minutes until tender, then drain and fluff.
- While the quinoa is cooking, prepare the other ingredients by dicing celery, apples, and chopping parsley and walnuts.
- In a small bowl, whisk together the dressing ingredients: walnut oil, lemon juice, brown sugar, celery salt, white pepper, cinnamon, cardamom, allspice, and optional salt.
- Combine the cooled quinoa with the celery, apples, parsley, walnuts, and raisins in a large mixing bowl.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill until ready to serve.
