Kale Apple Salad

Ingredients

Candied Walnuts

  • ½ cup walnut halves
  • 2 tablespoons coconut nectar or maple syrup
  • ¼ teaspoon sea salt

Lime Vinaigrette

  • ¼ cup lime juice
  • ¼ cup rice wine vinegar
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon minced garlic
  • ½ cup extra virgin olive oil
  • 1 tablespoon dark sesame oil
  • 2 tablespoons Swerve or sweetener of choice

Salad

  • 2 heads kale, chopped fine and massaged (optional)
  • 2 heads endive, chopped
  • 1 head radicchio, chopped
  • 1 apple, cored and diced
  • 1 cup seedless red grapes, sliced in half
  • 3 stalks celery, sliced
  • 1 cup grape tomatoes, halved

Instructions

  1. Prepare the candied walnuts by cooking walnut halves with coconut nectar and sea salt in a skillet over medium-high heat for about four minutes, then cool on parchment paper.
  2. Blend lime juice, rice wine vinegar, ginger, garlic, olive oil, sesame oil, and Swerve until smooth to make the dressing.
  3. In a large bowl, combine kale, endive, radicchio, apple, grapes, celery, and tomatoes.
  4. Toss the salad with the dressing and serve.
